Ingredients

For the white mousse

  • 200g Beacon white mmmMallows
  • 2 Tbsp (30ml) milk
  • 1 slab (80g) Beacon Ivory Cream, melted
  • 1 cup (250ml) cream, whipped

For the pink mousse

  • 200g Beacon pink mmmMallows
  • 2 Tbsp (30ml) milk
  • 1 slab (80g) Beacon Ivory Cream, melted
  • 1 cup (250ml) cream, whipped

To assemble

  • 4 meringue nests, broken into chunks
  • Handful fresh berries
  • Fresh mint for serving
  • Four short, clear glasses to serve

Method

  1. Place the white mmmMallows and milk into a large bowl and microwave for approximately 8 minutes or until melted.
  2. Remove from the microwave, whisk vigorously until smooth and allow to cool slightly.
  3. Add white chocolate to a large bowl and stir through melted mmmMallows.
  4. Fold in the whipped cream until well incorporated and refrigerate until firm.
  5. Repeat the above process for the pink mmmMallow mousse.
  6. To assemble, place meringue chunks at the bottom of each glass along with some berries.
  7. Top with white mousse, more meringue, pink mousse and more berries.
  8. Repeat this process until the glass is full and the layers clearly visible.
  9. Top with the extra berries and fresh mint.
  10. Serve immediately.
