Giant funny-face cookie lollies
Everything tastes better on a stick! Not that these yummy, oversized sugar biscuits need any help… Get the kids involved and make funny faces using an assortment of jellies, marshmallows and liquorice.
- 1 cup (250g) butter, softened
- ¾ cup (165g) castor sugar
- 2 tsp (10ml) vanilla extract
- 1 egg yolk
- 2½ cups (335g) flour, plus extra for dusting
- 5 lolly sticks
- 1 tub (400g) vanilla frosting
- Selection of sweets and snacks (we used mmmMallows Twisters, popcorn, Jelly Tots and Liquorice Allsorts), for decorating
Cream butter and sugar together until pale and fluffy, about 10 minutes.
Add vanilla and egg yolk and beat to combine.
Fold in flour and combine to form a dough.
Cover with cling film and refrigerate for 30 minutes.
Preheat oven to 160°C.
Dust a work surface lightly with flour and roll out cookie dough to about 5mm thick.
Cut out cookies using a large round cookie cutter (about 8cm in diameter).
Insert a lolly stick at one end of each cookie and place on a greased baking tray.
Bake for 12-15 minutes or until cookies are firm and slightly golden. Set aside to cool.
Spread a little vanilla frosting on each cooled cookie.
Decorate your cookies by arranging marshmallows and popcorn as hair, and use Jelly Tots and Liquorice Allsorts to make eyes, mouths and noses.
