Giant funny-face cookie lollies

Everything tastes better on a stick! Not that these yummy, oversized sugar biscuits need any help… Get the kids involved and make funny faces using an assortment of jellies, marshmallows and liquorice.

Ingredients

  • 1 cup (250g) butter, softened
  • ¾ cup (165g) castor sugar
  • 2 tsp (10ml) vanilla extract
  • 1 egg yolk
  • 2½ cups (335g) flour, plus extra for dusting
  • 5 lolly sticks
  • 1 tub (400g) vanilla frosting
  • Selection of sweets and snacks (we used mmmMallows Twisters, popcorn, Jelly Tots and Liquorice Allsorts), for decorating

Method

  • Cream butter and sugar together until pale and fluffy, about 10 minutes.
  • Add vanilla and egg yolk and beat to combine.
  • Fold in flour and combine to form a dough.
  • Cover with cling film and refrigerate for 30 minutes.
  • Preheat oven to 160°C.
  • Dust a work surface lightly with flour and roll out cookie dough to about 5mm thick.
  • Cut out cookies using a large round cookie cutter (about 8cm in diameter).
  • Insert a lolly stick at one end of each cookie and place on a greased baking tray.
  • Bake for 12-15 minutes or until cookies are firm and slightly golden. Set aside to cool.
  • Spread a little vanilla frosting on each cooled cookie.
  • Decorate your cookies by arranging marshmallows and popcorn as hair, and use Jelly Tots and Liquorice Allsorts to make eyes, mouths and noses.
  • Serve.
